Pomegranate drink
( 30 minutes, plus chilling time )
2 L (2 qt ) water
½ cup honey, or sugar to taste
1 small cinnamon stick
2 whole cloves 20 large, fully ripe pomegranates
At least 4 hours before serving, heat water,
honey, cinnamon stick and cloves together and boil for 2 minutes; remove from heat, let
cool and refrigerate.
Meanwhile, wash and dry pomegranates and, pressing firmly with
your hands, roll each of them on a hard surface until they crack.
Hit the rind with a knife handle to help break pomegranate
apart, separate the pieces and scoop out the seeds, discarding all the white
pith and rind, to avoid a bitter aftertaste.
